What's For Breakfast?

Banana Chocolate Chip Muffin Recipe

I have a love-hate relationship with cooking. I love cooking but hate all the planning that goes into making a weekly menu. With 3 kids to feed everyday, I run out of ideas and the menu can start to be too predictable. I came across this recipe a few years back and it is a hit with everyone who has every tried them. Enjoy!

3 overly ripe bananas
1 egg
1/3 cup milk
1/3 cup sugar
1/4 cup brown sugar
1 1/2 cups flour
1 tsp baking soda
1 tsp salt
1/4 cup chocolate chips

Preheat oven to 350 degrees.

In a large bowl, mash the bananas with a fork. Whisk in egg, milk and sugars.

In a separate bowl, combine dry ingredients. Add dry ingredients to the wet. Stir until combined.

Fold in chocolate chips. 

Bake in muffin tin for 25-30 minutes.

These are a great snack too!
